Barbecue Trifle Recipe - Tesco Flame Academy

When you think of barbecue food you wouldn't automatically think of a trifle. Well the Tesco Flame Academy have some wonderful desserts recipes that you can create on the BBQ and i got the chance this week to recreate one.

The barbecue trifle is an intermediate recipe and will only take you five minutes to prep and has a cooking time of under eight minutes!

To get started you will need to buy the following ingredients from you local Tesco:

  • 300 ml of mascarpone 
  • 600-900ml of ready-made custard 
  •  peaches, nectarines & strawberries 
  • madeira cake 
  • fruit juice, orange liqueur or sweet wine 
  •  almonds or nuts
The first thing you need to do is take the light mascarpone and mix it with the custard in a medium size bowl. Continue to stir until the mixture runs smooth, continuing to add custard to the mascarpone until the texture is desirable. Cover the ingredients and chill in the fridge.



Next you will need to prepare your choice of fruit for the BBQ. Wash and cut all fruit into manageable sizes, one cut brush with sun flower oil.



Cut the madeira cake into thick/small slices and put to one side.


Instead of using almond i wanted to use chopped mixed nuts and raisins to put on top of the treat. 


Now that you have  have everything ready to go you need to get cooking. Place both your cake and fruit on the grill. Barbecue your cake for about 2 minutes until marked on each side and barbecue for fruit 4-8 minutes p i only kept my strawberries on for 1 or 2 minutes as they begin to become soggy if left on for too long.




Wait for both cake and fruit to cool down before you begin to put the cubes of cake in the base of your glass.


Add your tablespoon of you juice to each serving and then pile the fruit on top of your cake, leaving enough space for the custard mix at the top.



Ocne you had added the mix you can then pour on your almonds or nuts to finish the trifle off. Consider using the back of a spoon to smooth over the top of the trifle if you wish to make it look more presentable.


You can now kick back, relax and enjoy your treats. If the trifle is not consumed just after cooking then it needs to be kept covered in fridge.

The recipe was easy to follow, easy to prep and cook. Almost anyone could do a good job first time round. The cake is sweet, creamy and decadent, it could be enjoyed be all members of the family.

These were super good. I did substitute diced Romas for the bell peppers (alas, can't stand 'em) and chopped green chilis for the sliced jalapeƱos. And I used spinach tortillas just for fun, which you might consider trying yourself. They add a nice zing... Thanks for the recipe.
