3 Simple Mother's Day Recipes


On Mother's Day i got the chance to cook-up a storm in the kitchen thanks to Tesco.com. In this post i will show you how to make three of your very own simple Mother's Day breakfast recipes.

I was challenged to recreate these three super simple recipes for breakfast all with the help of my two year old Ted. Anyone with a young child will know just how hard it can be to cook and keep you little ones entertained, which is why these simple recipes are ideals for those families with little ones.

The first task of the day was to get Teddy and Charlie settled. So i set them to work making a Mother's Day card, this kept Ted entertained for a good ten minutes, which was enough time for me to get everything prepared and started.


 Here are the three recipes, which you toddler can get involved with making:

Scrummy Scrambled Eggs & Smoked Salmon


To cook this simple Mother's Day recipe you will need to get your hands on the following ingredients from your local Tesco's:

  • 6 Eggs
  • 7ML Milk
  • 1 Tablespoon of Butter
  • 4 sliced bagels
  • 1 x 100g of packed sliced smoked salmon
Optional 
  • 4 washed and sliced spring onions
  • Small bunch of snipped fresh chives
Perpetration Time: 15 Minutes
Cooking Time: 10 Minutes
Serves 2-3 people

Step 1: crack the eggs into a large bowl


 Step 2: once the eggs have been added to the bowl you now want to add the 75ml of milk. 

At this step you have the option to add any seasoning you wish, in my recipe i added a touch of paprika to give the meal a bit of an edge. If you decide to use chives in your recipe now is the time to add them into the mix.

Once you have your desired seasoning you then want to start whisking until it becomes a pale yellow in colour.




Step 3: melt the table spoon of butter into your frying pan. If you are adding in spring onions into the recipe then you should do so here.

Step 4: turn-up the heat (3-4) and add the beaten eggs. Begin to gently stir with a spatula every 20 seconds or so until cook through. We know our egg is cooked when it starts to get a golden brown glaze over the top.


Step 5: whilst the egg is cooking you can have the kids help you cut, toast and butter the bagels.

As you can see from the photos we had Ted helping us and he loved it.


Step 6: when the egg is cooked pile the egg on top of the bagels and have your kids tear up the salmon and place it on to the plate or into the bun.


Step 7: serve with nice drink of orange, tea or water:

 Yummy Fruit Yoghurt Pots


So if you fancy making a healthy breakfast for your mum then you will need to source the following ingredients: 
  • 150g of raspberries
  • 150g of strawberries
  • 150g of blueberries
  • 100g of Oats
  • 400ml of low-fat natural yoghurt

Preparation time: 10 minutes
Serves 2-3 people

Step 1: wash and cut the fruit you plan on using in the recipe, separating the fruit into different mixing bowls.



Step 2: then you need to either use a fork or potato masher to make a rough puree out of your first fruit, as you can see we used blueberries - you can have your kids to help out at this stag. If like me you were against the clock you might want to consider using a blender. 


Step 3: once you have the required texture begin to place two tablespoons into the base of your serving cup.

Step 4: then put two table-spoons of yoghurt on top of the blueberries. Spread the yoghurt so it completely covers the layer of fruit.

Step 5: repeat the process with the rest of the fruits and consider adding layers of oats between the yoghurt.


Step 6: once you have all the fruits added then it it time to top the mix with a healthy splashing of oats. 


 Step 7: decorate each cup with a leftover fruits and serve cold

 Easy Peasy Croissants


One the easiest but most delicious treats you can serve on Mother's Day is a simple continental breakfast. To serve create this meal all you need is the following ingredients:

  • 100g of mature grated cheddar
  • 60g of wafer-thin ham
  • 6 pre-made croissants
If you want to make your own croissants then you will need the following ingredients as well:
  • 350g pack of just-roll croissants
  • 2 tablespoons of sun-dried tomato paste
  • 1 tablespoon of milk for dabbing
Step 1: preheat the oven to gas mark 6, 200C, fan oven 180C.

Step 2: unroll the croissant pack onto a flat surface 
Step 3: separate dough with the knife to make six individual triangles
Step 4: add a teaspoon of sun-dried tomato to the top of each triangle
Step 5: you can then top each one with a few pieces of ham and scatter over the cheese
Step 6: roll up the dough making sure the filling is enclosed and curl the edges in slightly to make a croissant shape
Step 7: dab the top of the dough with milk
Step 8: cook for 12 minutes or until golden and crisps 
Step 9: serve and enjoy

If like us you don't want to cook the croissants you can always buy amazing pre-made ones from the bakery at Tesco. We invested in some nice ham from the deli and a block of my favourite Applewood smoked cheese.




 All we had to do was blast the croissants in the microwave until they were warm enough, grate the cheese and slide the ham. Simple.. yummy and delicious.
