Smoky BBQ Mushroom Buns Recipe - Tesco Flame Academy

BBQ season is well and truly upon us ladies and gentlemen. For those of you that are looking for new recipes you are in luck, i have teamed up with Tesco's this week to bring to you three recipes from their Flame Academy.

The first recipe is an easy one, it makes for a brilliant starter and is suitable for vegans and has just 234 calories per serving. The Smoky BBQ Mushroom Buns Recipe has a 15 minute prep time, with 30 minutes for marinating and it only takes 30 minutes to cook.

You can also pick-up everything you need for this recipe for under £10!

For those that don't know i am mad muncher of mushrooms, so if like me you want to tuck into something a bit different this summer why not follow my simple recipe inspired by the Tesco Flame Academy.

To get started nip down to your local Tesco store and pick up the following Ingredients (Serves four):
  • 3 tbsp tomato ketchup
  • 2 tbsp soy sauce
  • 1 tbsp maple syrup, golden syrup or agave syrup
  • 1 tsp hot smoked paprika
  • 1 tbsp olive oil 
  • 4 large flat mushrooms, wiped and stalk removed
  • 4 soft white buns, split open, and shredded 
  • 1 crispy lettuce
Begin by removing your large flat head mushrooms from the packaging. Give them a quick wash and then begin to remove the stalk should you wish.


Next you will need to grab all the  bottled ingredients to begin making the BBQ sauce that will go on top of your mushroom. Begin by mixing adding 2 tbsp soy sauce followed by the ketchup, vinegar, maple syrup, and olive oil - adding in the paprika last and giving it a good old still until all the ingredients all mix well and the sauce is smooth,



Find a tray or plate to house your mushroom and add generous helpings of your sauce. I added all of the sauce as i like my food to be moist, but you should find that one-two spoon-fulls is enough.


The next step is to get these bad-boys on the Barbecue! Gently place the mushrooms onto the barbecue on a medium heat - be carefully not to spill the sauce. You will then need to cook the mushrooms for 2-3 minutes; turning every 30-40 seconds, or until they are cooked through.


Before the mushrooms are cooked you might want to grab your freshly made bread-buns and salad to begin preparing you sand-which. Whilst i only i had lettuce other have added a wide range of greens and cheeses to spice up the buns. 


Once you have the mushrooms off the BBQ quickly place them inside your buns and tuck-in... well not before taking a few snaps for Instagram beforehand.


So all-in-all this was an simple recipe that is easy to make, has short prep and cooking time. Whilst it is a simple recipe that doesn't not mean the taste bland or boring. I found the mix of fiery paprika, soy and tomato sauce very sharp, tangy and moreish!

I am not a huge fan of carrot and cabbage slaw but should you be interested in adding that little bit extra then you can find a simple recipe below:

  • 100g (3 1/2oz) red cabbage, 
  • shredded 2 carrots, grated 
  • 3 spring onions, finely chopped 
  • 100ml (1/2 pint) plain soya yogurt 
  • 2 tsp wholegrain mustard
  • 1 small lemon, juiced
