I was casually browsing Reddit on my lunch today and i stumbled across a recipe that blew my mind!
It was a recipe for Mashed Potato Bacon Bombs and for those of you that know me or follow me on social media, bacon has always been close to my heart... and stomach.
I thought i would share with you the recipe submitted by user TedBuckley as i think it would make the perfect Father's Day treat for any food loving Father.
- Prep Time: 10 minutes
- Cook Time: 15 minutes
- Difficulty: Easy
- Servings: 8-10
- 2 cups leftover and chilled Mashed Potatoes
- Bacon: One slice per Bomb
- 1 Egg
- 1/2 cup Dry Bread Crumbs
- Cheddar Cheese cut into chunks (one chunk per Bomb)
- Salt and Pepper to taste
- Skewers or toothpicks
- Oil for frying~ I used Canola
- Sour Cream and toppings for dipping
- In a large bowl combine the Mashed Potatoes, Egg, and Salt and Pepper until well blended.
- Grab a small scoop of the Mashed Potatoes and gently form it around a Cheddar Chunk
- Place the Bread Crumbs into a shallow bowl, and roll that baby evenly in the Bread Crumbs.
- Wrap a slice of bacon around each one, skewer and fry them in the oil (350 degrees until they are evenly golden)
- Let them drain on some paper towel.
- Tuck in and forgot about your dadbod for just one day, you deserve it!
